Many of our recipes are given to us by guests. We love to exchange recipes so why not bring your favorite?  Here's two of my favorite recipes.

Raw Apple Cake The best apple cake you have ever tasted.

1 cup sugar
1/2 cup margarine
1 egg
1/2 cup warm coffee
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
2 cups raw apple - cut fine
Mix in order. Grease and flour 8" by 9" pan.
Pour in pan and add topping. 

Topping:
1/2 cup brown sugar
1/2 tsp cinnamon
1/2 cup chopped nuts 

Mix and spread on top of cake batter. 

Bake 40-45 minutes at 350 degrees.


Pumpkin Roll One our favorites at Richards House, delicious.

Roll:
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 tsp cinnamon 

Filling:
1 cup powdered sugar
8 oz cream cheese (room temp)
4 tbsp margarine
1/2 tsp vanilla

Mix together as listed.
Line 10 1/2" by 15" cookie sheet with wax paper. Trim excess wax paper to minimize smoking. Pour batter onto cookie sheet, spread evenly.
Bake 12-15 minutes at 375 degrees
(may sprinkle with nuts before baking).
Prepare linen towel heavily sprinkled with powdered sugar. After baking, turn onto towel, wax paper side up. Remove paper and roll into towel. Cool 3-40 minutes rolled. Prepare filling while roll cools. Mix ingredients thoroughly. After roll has cooled, unroll and spread filling evenly. Re-roll and slice for serving.
