Raw Apple Cake
The best apple cake you have ever tasted.
Ingredients:
1 cup sugar
½ cup margarine
1 egg
½ cup warm coffee
1 ½ cups flour
½ teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon salt
2 medium apples, sliced
Mix in order. Grease and flour 8″ by 9″ pan.
Pour in pan and add topping.
Topping:
1/2 cup brown sugar
1/2 tsp cinnamon
1/2 cup chopped nuts
Mix and spread on top of cake batter.
Bake 40-45 minutes at 350 degrees.
Cinnamon Sour Cream Coffeecake
This one you need to come back for seconds.
Ingredients:
4 eggs
1/2 cup sugar
3/4 cup oil
1 yellow cake mix
1 cup sour cream
3/4 cup chopped nuts (optional)
1/2 cup brown sugar
1 tablespoon cinnamon
Beat eggs until thick and fluffy. Add sugar and oil and beat again. Blend in yellow cake mix, sour cream and nuts. Pour half the batter into a well-greased bundt or tube pan. Mix together brown sugar and cinnamon. Sprinkle over the batter in pan and mix in with knife blade to form swirl. Pour remaining batter on top. Bake in preheated oven at 350 for about one hour.
Note: 1 cup milk and 1 teaspoon vinegar mixed can be substituted for the sour cream.
Pumpkin Roll

Blueberry Coffee Cake
What can I say about this one too.... yummy!
Ingredients:
1 ½ cups all-purpose flour
¾ cup sugar
2 ½ teaspoons baking powder
1 teaspoon salt
¼ cup vegetable oil
¾ cup milk
1 egg
1 ½ cups blueberries (frozen)
Mix dry ingredients. Add oil, milk and egg and mix. Fold in blueberries and spread batter into a 9″ round glass pie pan.
Topping:
1/3 cup all-purpose flour
½ cup brown sugar, firmly packed
1 teaspoon cinnamon
¼ cup margarine
½ cup blueberries (frozen)
Mix flour, sugar and cinnamon. Pour evenly into pie pan on top of batter. Slice margarine into about 5 even pieces and place on top of topping. Sprinkle blueberries evenly on top.
Bake in preheated oven at 400 F for 15 minutes followed by 25 to 30 minutes at 350 F. Check for doneness with knife.
